Vegan Diaries


In 2020 when the pandemic first began, my husband told me that he wanted our family to begin thinking more about the foods we put into our body and how we could transition to eating healthier. At the time, I was starting a workout regimen to help me lose weight and he thought that this idea would help me in that process. What I didn't expect was that one day he would ask me about transitioning to vegan eating. I thought it was a good idea but there was only two problems.


  • #1 - I'm not a natural born cook. I'm unashamed to say it. I grew up a two sport athlete and I didn't spend a lot of time in the kitchen. I am more of an I make it work kind of girl when it comes to putting food on the dinner table. After I graduated college and began living on my own I've had to learn recipes by YouTube videos, cook books, or asking my mom for cooking dates.


  • #2 - I didn't have the slightest idea about what it meant to "go vegan." To me it sounded like a foreign idea. Being vegan meant doing a lot of research about natural and earth grown foods, many of which I've never even heard of! Also, when you've been programmed to eat certain foods your entire life - dairy, meat, processed foods - then going vegan just doesn't sound exciting or fun.


Fortunately for us, the pandemic had just begun and the only place to go was the grocery store. Not to mention, we spent plenty of time at home which allowed hubby and I to research vegan foods and vegu-cate ourselves. It didn't take long before we found ourselves reading vegan blogs, tuning in to Dr. Sebi's nutritional videos, and looking through Target or Whole Foods "vegan" aisle, looking at a bunch of meatless food substitutions. We basically said "f it!" lol We weren't going to learn anything by staring and wondering what these foods would taste like. It was time to give them a try.


We purchased a bunch of things like gardien ground be'f, daiya non dairy cheese, morning star meatless nuggets, beyond meat meatless burgers, etc. (Just to name a few.) Some stuff took some getting used to. It took some repeat meals before we got the hang of the vegan taste. However, some of these items were so normal that if the labels didn't say meatless, non-dairy, or vegan then we wouldn't have even known. So - he we were! Starting to make dinners and lunches out of vegan foods and transitioning our eating. But, let me stop cappin'. lol We're not completely vegan. We've still eaten pizza, chicken breast, and had some regular desserts often. It's just our hope that one day we could be completely vegan.


That leads me to my vegan diaries that I'm beginning this year. Using my electric eats cookbook (gifted to me by hubby 😊) I made it a goal that every month I would try at least 2 new vegan meals to add to our meal list. The first meal of this month was MUSHROOM BURGERS!! I never thought that we would ever be eating or making a burger made of mushrooms (and chickpeas!)

After following the recipe, the burgers came out SO GOOD! I mean, SO GOOD! The moment we tried it Dwayne and I both agreed to make an extra for both of us.
